Here are the essential steps to prepare a new drum smoker before its first cook.
Part 1: Thermal burn-in
Cure paint and remove manufacturing residue.
- Start gently. Light a small fire and bring the smoker up to heat gradually, following the temperature range and duration specified in the product instructions.
- Complete the burn-in. Increase the heat only as directed for your model. Keep the lid and vents in the recommended positions and allow any first-use residue to burn away before cooking.
- Cool naturally. Close all valves and let the fire die slowly. Do not use water.
Part 2: Seasoning
Build rust protection and a naturally non-stick cooking surface.
- Wipe clean. Once the smoker is completely cool, wipe away ash and residue with a dry cloth.
- Apply a thin layer of oil. Coat the unpainted interior walls, inside of the lid, and stainless-steel grate with a very thin layer of an approved high-smoke-point oil. Wipe away excess so the oil does not drip.
- Bake the oil. Heat the smoker according to the product instructions so the oil can polymerise into a protective layer.
- Repeat if recommended. If your product instructions call for another coat, allow the smoker to cool, apply another micro-thin layer of oil, and repeat the heating cycle.
Always operate the smoker outdoors on a stable, non-combustible surface. Keep children and guests away during burn-in and while the cooker cools.
